Whole mango, chopped (filthy job...next time we are going to experiment with tinned in juice ) and catch juice in bowl, then add... Finely diced small red chilli Finely diced red onion Juice of half a lime Chopped fresh coriander Yum...great with fish, too. Stuff that can be prepared in minutes, is fresh and healthy and doesn't need cooking. Here's one I love Tomato Salad Thinly slice several tomatoes. Line the bottom of a flat dish with them. Chop 2 or 3 spring onions and chuck on top. Chop a handful of chives and chuck on top. Make a dressing with virgin olive oil and half a teaspoon of pesto. Drizzle over everything. Eat on its own or as side salad with quiche etc. Use lots of crusty bread or garlic bread to mop up lovely juice - there is lots of it. Quote Share this post Link to post Share on other sites

Toss in one of those little pots of feta and olives in olive oil, drizzling the oil around. Sprinkle over some balsamic vinegar, a few torn basil leaves and a good screw of black pepper. Yum!! frogslegs Report post Posted June 30, 2009 I like to make a sort of tabouleh because nice mediterranean feel. Prepare 200gr couscous (put in bowl with spoon of olive oil and some salt, cover with water and leave for five minutes). Mix with vegetables roasted in the oven (peppers, onions, tomatoes), cook smallish lumps of chicken on the grill. Mix everything, add juice of a lemon, and olive oil, fresh coriander chopped, et voilà! I also liked this salad that my husband goes mad about Cook 50g lentils (Lentilles du Puy are ideal) according to packet instructions, or use tinned lentils or beans (not baked beans!) Sweat chopped bacon in a pan with no fat for 5 min. Put aside Chop mushrooms into small pieces and add to pan. Mix every thing + add tomatoes, lettuce,.... You can replace lentils with warm new potatoes. Add vinaigrette (1/3 vinegar, 2/3 oil, 1 teaspoon mustard, salt, pepper) put mix in a jam jar. Shut lid VERY TIGHT and shake it baby!!!
